Ingredients

Scale

2 medium ripe bananas (mashed)

¾ cup full-fat cottage cheese

2 large eggs

2 tbsp honey or maple syrup

½ tsp baking soda

½ tsp cinnamon

Optional: ¼ cup mini chocolate chips or chopped walnuts

  3. Pour mixture into a bowl and stir in flour, baking powder, baking soda, and cinnamon. Mix just until combined.
  4. Fold in optional chocolate chips or nuts.
  5. Spoon batter evenly into 12 muffin cups (about ¾ full).
  6. Bake for 18–22 minutes or until tops are golden and a toothpick comes out clean.
