Description

Frozen blueberry yogurt bark made with protein powder, creamy yogurt, and juicy berries. A healthy, no-bake snack the whole family will love.


Ingredients

Scale

1.5 cups greek yogurt or cashew yogurt

1 cup frozen blueberries

4 tablespoons water

1 scoop protein powder of choice


Instructions

  1. Line a baking sheet with parchment paper and ensure it fits in your freezer.
  2. In a small saucepan, simmer blueberries and water over low heat for 5 to 7 minutes until slightly broken down.
  3. Let the blueberry mixture cool slightly.
  4. In a mixing bowl, whisk together yogurt and protein powder until smooth.
  5. Spread the yogurt mixture evenly over the parchment paper, about 1/4 inch thick.
  6. Dollop the blueberry mixture on top and swirl with a spoon or toothpick.
  7. Freeze for at least 3 hours until firm.
  8. Break into pieces and store in a sealed container in the freezer.

Notes

Add lemon zest, coconut flakes, or sliced almonds before freezing for extra texture and flavor. For a dog-safe version, use plain yogurt without added sweeteners.
