Description

Quick and cozy carrot cake cookies made with a boxed mix, shredded carrots, and a hint of spice. Perfect for busy bakers!


Ingredients

Scale
  • 1 box carrot cake mix
  • 2 large eggs
  • 1/2 cup neutral oil (canola or avocado)
  • 1 tsp vanilla extract
  • 3/4 cup freshly grated carrots
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup golden raisins (optional)
  • 1/4 tsp cinnamon (optional)
  • 1 tbsp crushed pineapple (optional, for moisture)


Instructions

1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.

2. In a bowl, mix cake mix, eggs, oil, and vanilla until combined.

3. Fold in grated carrots, nuts, raisins, cinnamon, and pineapple.

4. Chill dough for 30 minutes in the refrigerator.

5. Scoop dough onto tray and bake for 10–12 minutes until edges are set.

6. Let cool for 5 minutes on tray, then transfer to rack.

7. Optional: drizzle with cream cheese glaze when cooled.
